Staffordshire oatcake

A Staffordshire oatcake (a type of savoury pancake) is made from oatmeal, flour and yeast to make a dense pancake. It is cooked on a griddle, "backstone" or "baxton". The oatcake is a local speciality in the North Staffordshire area of England. They are normally referred to as Staffordshire oatcakes by non-locals, because they are made in and around Staffordshire and Cheshire; locally they are simply called "oatcakes".

Examples of use of OATCAKES
1. Lunch: Lentil soup, three oatcakes with hummus, one small chocolate alternative bar.
2. It‘s a healthy feast of wheat–free pasta with pesto and oily fish, avocado and mixed–seed salad, and fruit and oatcakes for pudding.
3. And we, a collection of city–dwelling, overweight women, do it on one bowl of porridge, one flask capful of soup, three oatcakes, a bit of hummus and a health bar.
4. The pure, lovely young greens, with their glowing eyes and healthy skin (from all those organic oatcakes and homegrown smoothies), who have devoted their lives to saving the world.
5. Mr Cameron has also been on a rough–and–ready version of the fashionable GI diet – followers are encouraged to eat complex carbohydrate foods, which release their energy slowly, such as oatcakes, high–fibre cereals and porridge.
